 Post subject: Lamb kebab recipe.

For those of you who love kebab but hate the fat, follow this recipe and enjoy the closest thing to it in flavour without the fat content.
400g minced lamb
2 garlic clove crushed
1 tsp ground cumin
1 tsp ground coriander
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp ground black pepper
1/2 tsp salt

squish it all together and put in an oiled loaf tin at 180c fan/gas 6 for 20 mins
serve in thin strips in a warm pitta with lettuce, tom and garlic dip, drop of chilli is desired

No egg or ice cubes to bind it together? I'd do that, plus keep the mix in the fridge a couple of hours. Otherwise sounds spot on.

No it binds well, the taste is amazing without the fat running down your chins!

Do you recommend mincing your own lean pieces of lamb, Mr Butt or buying it ready minced. The wife says Ta for the recipe and is going to make it.

The wife made ice cream yesterday and it is delicious. She made meringues with the leftover egg whites......amazing.
Really enjoying all this home cooking and baking. Her lemon drizzle cake and banana loaf are excellent.

Tahina sauce is great with any kebabs from the gulf and is generally what the go to sauce of Arabs is.

1 clove of garlic
4 tbsp tahina paste
Juice of 1 lemon
Half Tsp of salt
A bit of chopped parsley
100-150ml of water

Blend it. Should be medium thick, if you prefer it runnier add another 50 or 100ml of water and blend again.

That served with the kebab above is class.

Forgot to mention, add half the lemon first before blending. If you like it more citrusy add in the remainder.

I used minced lamb from ready minced as you need the fat to make sure it`s not dry, it all comes out and can be drained off.

Arabic rice. Put the following in a pan ready to boil up.

150g of rice (any will do for this purpose) for 2 people
A good sprinkle of turmeric
Cinnamon stick
Tsp of sugar
50g butter
2 tsp of cardamom powder (failing that crush 10-12 pods)
Tsp of salt
Optional - a handful of raisins, I don't bother but if you want, crack on.

Put all in a pan, boil the fucking kettle. Cook the fucker 10 mins.

Chop up some onion rings, coriander to serve on top of the meat.

Rice, kebab, Tahina, tabbouleh salad - you're in arabic heaven. World class food.

Serve with thin bread (something like tortilla) under the kebab

How much water should you put in rice? Also my other half doesn’t like lamb would it work with beef mince 5% fat?

I usually put at least double the quantity of rice. Gas mark 10 for about 10-15 mins. If it starts getting claggy and it's still adente, add in a bit more and boil another 1 or 2 mins. Works for me.

yep, beef mince would work but the more the fat, the more the meat sticks. Really lean cuts, I'd add an egg, mix it about and stick it in the fridge a bit.

Knocked this up last night and was very nice. Only downside was when I tried to slice it crumbled a little.

Thinking of making some chappatis but my delia smiths cook book says use wholewheat flour. Trouble is I cant get hold of any. Can you use ordinary plain flour?
