Outlook has updated itself to an 'improved' version on my Android phone, and it's utter shit. Probably works ok on a tablet but not on a phone.

I can't revert it back to how it was, the only option is for the desktop version, which is almost as impractical.

Any ideas on how to change it back?

All different versions are on there, just pick a slightly older one and download from the phone.
