think its summat to do with the ingrediants marinating or something...I think the flavours kind of mature with time much like a fine wine or cheese!

bubble and squeak wouldn't be what it is if it was made on the same day.

I think by the second day mould sets in and it's either the mould making it taste of mushrooms or the psychadaelic effect of eating it that makes it taste better. Most likely the second of those to be honest.

You can get bacon shanks?

I prefer lamb shanks slow cooked in a nice sauce and served with roast potatoes, mange tout and baby corn.

And ham shanks are ok now and again.

I think ham or bacon shanks are things difficult to find outside the north east. I used to try and buy them when I moved to Ull.....tried different butchers but in each case they first didn't hear what I said so that I'd to repeat it in a loud voice. Then they didn't know what I meant and I'd have to try and descibe 'shank'.
By that time the entire queue woukld be staring at me and wondering who was this strange alien

pease pudding's another north east delicacy that hasn't cottoned on elsewhere. As well as parmos, which means I would be struggling if I ever moved away from these here parts.
