If the corned beef is for a sandwich then it should be kept in the fridge as it is easier to cut when it has been chilled, but if it is to make a corned beef & tattie pie then it should be kept at room temperature as its easier to mash when warm!!

I'm losing all faith in the Bunker.

Liver and onions is delicious. Liver and kidneys both make superb gravy and only a vegan on drugs would say otherwise. I once had a bowl of what turned out to be mixed offal stew for a starter and it tasted great although the occasional mystery organ bobbing to the surface was a bit off-putting.

Also the usually sane Chip has got owls with their rotating heads and finely honed rodent killing skills in a list with the pointless and despicable wasps and moths.

cannot beat liver and onions plus corned beef sandwiches. better than a lot of poncy grub they try to sell you nowadays. my food from hell has got to be garlic. stinks like hell and anything with it in gives me indegestion.

Crispy dumplings on steak and kidney casserole or just with mince and onions also superb.

And while we're on about good uses for offal and suet - steak and kidney pudding. Would it be as good without the kidneys? NO OF COURSE IT WOULDN'T.

A particular hate of mine is the French tripe "sausages" known as andouillettes.
I am totally not exaggerating when I say they smell of shit. Real, genuine, poo shit. With a special sauce to make them smell even more like shit. Revolting.

Haggis is indeed top notch food Mr N, even the haggis in batter from Scottish chip shops is great use of offal.

On the other hand Monty is spot on about andouilettes closest thing to shit a plate I've ever experienced. That and donkey sausage anyway.

Well is it sliced cold or cooked mixed into the mash almost like you’d do in a corned beef pie?

Do the mash, fry the mash, add the corned beef. Do the beans in a separate pan with an ounce of butter in them and add them at the end so the bean juice gets all the burned bits in it.

My favourite Corned beef sanwich is with raw onion and brown sauce. I had a corned beef slice for lunch today. Bonus as I got the corner piece. 9/10.

I don't like Liver, Kidney or any offal really. However I do like Haggis.

Street food sellers in south East Asia normally spend their whole life selling one dish and you'd expect them to be pretty good at it and they generally are.
You can see their disgust when some foreigner gives it a go for their TV show and asks them to the local to try it, but they're often too polite to tell them it's shit.

I agree. Asian street food is fantastic and super cheap, some of the best food I've ever had(9/10). Although nothing compared to frozen English breakfast from Herons which just reaches new level of culinary delight (12/5)

Last time we went we stayed in the Metropolitan which has the Michelin star Nahm restaurant. The chef is David Thompson. He’s just about the Worlds most respected Thai chef so foreigners can cook it! Street food is one of the best things about South East Asia though, that and the prostitutes, the fact you can eat something as amazing as would in a top resteraunt sat on a street for about a quid. Loads of people have said this place we’re going to tonight is fantastic I will come back with marks later, don’t get me wrong I’m not expecting it to be the standard of a Heron Breakfast, Fried Corned Beef or delivery Fish and Chips I’m a realist.
