Did that and it was delish,used the juices and the onions to make a nice gravy too.What do you suggest will be nice with a piece of silverside and can i use juniper berries with venison.


Yes Juniper goes well with all Game, about 6 crushed, don`t smash em, just break them with a rolling pin!

As for the Silverside, best pot roasted, if you roast it, quite dry and tough unless you cover with foil and put liquid to help steam and roast on low for 2 hours.

Pot roast is fantastic, melt a bit of butter in a casserole dish, when foaming turn up the heat and brown all sides of meat, remove meat and wipe dish, place meat back in with 15fl oz red wine, seasoning, thyme and 2 bay leaves, bring to a simmer on hob and then put in oven.

Pre heat oven to gas 1/140c, ensure well fitted lid or if not use tin foil to tighten it, pop in oven and DO NOT remove lid for 3 hours, remove lid and rest meat in foil for ten minutes, make a roux out of butter and flour and add in small pieces to juices in dish on hob to thicken.

Enjoy!

Great with roasted veg and creamy mash!
