 Post subject: Best red wine to use in Bolognese sauce

Me dad used to make ellish Bolognese sauce, which was basically tinned tomatoes, steak mince, finely chopped onions, loads of garlic and plenty of red wine.

I've tried to replicate it a couple of times, and I reckon I've used the wrong type of wine.

Any ideas about what type I should use?

The secret isn't the ingredients though, is it. The ingredients matter but the fact is a good spag bol has to simmer for at least two hours. Even better if you cook it in advance, leave it a bit and then reheat it.

Currently I have a Punt and Dennis sketch going through my head - World of Wine, with Dennis as a drunken wine expert.... "You.... You poured it onna fish! A fish! I'll tell you what I'm gonna do, I'm gonna come round to your house and suck your turbot...."

Don't buy a cheap wine, do as Mr I says, use a wine you would drink. Personally I would use like Mr Butt a Chianti. A decent Rioja or Burgundy does well. If you wish to make you Dad's recipe slightly more authentic, soften your Onions with carrots and Celery. Add to Slow Cooker. Then seal your Mince in same pan and add (including juices) to the Slow Cooker. Reduce wine in same pan and scrape any bits, then add to slow cooker. Then add your Garlic and Tinned Tomatoes and some beef stock, dried Oregano and freshly chopped Basil or Corriander leaves. 6-8 hours later :wink: :music-headbanger: :obscene-birdiedoublegreen:

Make sure you leave a few leaves back for garnish. I also sometimes (not authentic) put a bit of Worcester Sauce in!

Ms Grabec is also correct, better cooked slowly on the Hob or in the oven then rewarmed later or the next day!

What? You mean youse are saying you could sample a spag bol that's been slow-cooking for several hours, and tell whether the wine used was Burgundy or Aldi Everyday Plonk? I'm going to call your bluffs on that one as soon as I can arrange a series of tests!
