Egg poaching devices never get the egg quite right, they come out sort of inbetween boiled and poached. A chef told me that to get a proper poached egg you need to add a bit of vinegar, get the water to a rolling boil and then get it swirling as you drop the egg in but who can be arsed with that?

That is the way and it`s no bother, not a rolling boil though, just so the water is trembling and plop in for 2 and a half minutes for a lovely runny yolk :wink:
