how do you make the batter?

I've yet to make a decent batter. I heard it's better if you use sparkling water instead of normal water though.

Plain Flour
Tap Water
Pinch of Salt
Teaspoon of Biacarbonate Soda
Dash of Vinegar

You can use sparkling water and also Beer....Guinness is the best apparently!!!!

The reason I decided to try my own was because Joannas do lovely Spam Fritters but within weeks of me discovering them they diminished in size by about 60%!!!!

Another thing I'm gonna try is Potato Fritters in Batter!!!!
I remember getting them when I was a kid from Nickys in Burbank Street and they were cushty!!!!
They were called something else though....maybe Potato Scallops????

But I need help with them!!!!

Would I have to Par Boil the Taties before I batter them and then fry them????

Surely they tatie would still be hard if I never!!!!

Or do I just make sure I don't cut them too thick????
