The colours are Old red = New brown could be marked Live or L
Old Black = New blue could be marked Neutral or N
Old Green = New Green/Yellow

Isolate the cooker electrical supply, mains switch if necessary and connect the supply cable cores in the above order.

check the rating of the new oven in kw or watts . this will tell you what size cable you need but it needs to be able to take the current from the fuse/mcb/rcbo/rcd fitted

Depends if it's a oven only or an oven with a built in hob. Oven only would only require a 3 core 2,5mm flex which would plug into a normal socket. Oven and hob 6mm flex or twin and earth connected into the cooker point.
